Supervise night-shift bakery production, ensuring all items are prepared and presented in full compliance with Company recipes, standards, and photo guidelines.
Monitor product quality across assigned stations through regular tasting, visual checks, and oversight of mise-en-place throughout the shift.
Oversee the preparation and baking of Danish pastries, muffins, breads, and other bakery items, ensuring all processes follow Company recipes and procedures, and that recipe files are maintained and accessible to the team.
Lead and coordinate breakfast production for the night shift, directing Bakery staff during service in line with the guidance of the Executive Chef / Chief Baker.
Participate in daily briefings with the Chief Baker to review the previous day’s performance, plan upcoming production, and prepare for special events or operational needs.
Conduct clear and structured briefings with Bakery staff in the assigned station at the start of each shift, communicating priorities, standards, and safety expectations.
Control food consumption and waste in assigned areas by enforcing portion control, production planning, and strict adherence to Company recipes and standards.
Support the achievement of Bakery cost targets as directed by the Executive Chef / Chief Baker through efficient use of ingredients, labour, and equipment.
Create and maintain effective daily and shift production schedules for the assigned section, aligned with itinerary requirements and outlet demand, under the direction of the Chief Baker.
Monitor ingredient usage and stock levels required for daily production; plan and communicate orders in a timely manner and keep the Chief Baker informed of needs and variances.
Stay current with trends and new methods in bakery production, proactively sharing ideas and seeking guidance from the Executive Chef / Chief Baker on improvements.
