Prepare a wide variety of sushi dishes – including maki, nigiri, temaki, and sashimi – in line with Princess standards for quality, portion size, presentation, and food safety. Demonstrate strong knowledge of raw fish, seafood, rice, and complementary ingredients, ensuring authentic flavors and attractive, modern presentations. Execute and continuously refine sushi-rolling and knife techniques to deliver consistent, visually appealing dishes during high-volume service. Apply all food safety, public health, and allergen protocols when preparing and plating menu items, promptly reporting any quality concerns to the Executive Chef and Inventory Manager. Monitor and maintain stock levels of sushi ingredients and equipment, participating in regular inventory counts and communicating replenishment needs to the Food & Beverage and Inventory teams. Maintain a clean, organized, and compliant sushi station at all times, ensuring all utensils, tools, and equipment are properly cleaned, sanitized, and stored. Coach and support galley teammates on sushi production methods, knife skills, and product standards to ensure consistent delivery of the sushi menu. Engage with guests in a professional and friendly manner, explaining dishes, key ingredients, and flavor profiles, and responding to feedback to enhance the overall dining experience. Support broader galley operations as required, collaborating with the culinary team to deliver seamless, high-quality service across all outlets. At least five years of professional galley or kitchen experience, including a minimum of one year as a dedicated Sushi Chef in a high‑volume, high‑quality restaurant, hotel, or cruise ship environment.
